is there any way to have truck series and nns cars in the infield like in the garage while you run the cup cars?

Short answer: No.

Long answer yes.... But the track-maker (or yourself if you know how to do it) would have to add 3Do's in the infield of the NNS cars or Trucks with the corresponding mips much the same way as the Haulers, RV's, Emergency vehicles, buildings, etc are.
